When you shop this season, make sure there are plenty of greens and veggies in your groceries cart. Here is an idea for a tasty spring salad. I did not add any meat today because I made my own protein rich dressing, for which I used Greek yogurt . But feel free to add low fat dressing of your choice. Here is a list of veggies I used: romaine lettuce, tomatoes, cucumber, radish, red sweet pepper and a green onion. I sprinkled everything with a few cranberries, sunflower seeds, walnuts and 2 spoons of feta cheese. Of course you can create your own recipe and substitute any ingredients. For example, instead of cheese you could toss a grilled chicken breast. Yummy!! 🙂 Be creative and eat healthy!
